This delicate, silky, Champagne-adjacent wine features a fine effervescence and flavours of yellow apples and pears, white peach, bread yeast, and yellow flowers. With medium-plus acidity, it delivers a refreshing and refined palate. Like Champagne, pairings include luxury ingredients like caviar, sashimi, shellfish, foie gras, and deep-fried appetizers. Cheese pairings include salty Italian varieties, but especially Parmigiana-Reggiano.

Founded in 1987 by Vittorio Moretti, Contadi Castaldi winery transformed the historic 1880 brick-kiln of Biasca di Adro into a leading estate in Franciacorta.
