On the palate, the medium-plus acidity provides balance to the unctuous undertones that come from brief oak aging. For pairings, look to dishes with a little bit of spice and Asian-influenced cuisine (Thai especially). It will also work well with oysters, prosciutto, sauerkraut, pork, mild curries, ginger, and soft mild blue cheeses or Comté.
