Khà is a truly unique product that bridges multiple classic beverage styles. As a rice wine, it is made initially in a way that is reminiscent of sake; fermented with Koji yeast, albeit with different varieties of rice (yellow flower and purple sticky rices). From there, it departs into oxidative territory during a secondary fermentation that gives it qualities of Jura's Vin Jaune or Spain's Palo Cortado Sherry. With riveting acidity, it has notes of tart peach, soy sauce, keffir lime, and green almond.
