With low acidity, it pairs beautifully mushrooms (obviously) as well as with sushi and sashimi, complementing the delicate flavors of raw fish, and enhances the taste of tempura, and deep-fried foods. The wine also works well with fatty tuna, salmon, and dishes with delicate vinegars or teriyaki.
